First selection as the bunches are cut, and second sorting of grapes at the cellar door. Cold maceration. The alcoholic fermentation is kept at 16°C to maximize the fruit expression. Grenache was aged 5 months in concrete, Roussanne spent 5 months in French oak barrels. Bottling in December. Vineyards/Region The Saint-Roch vineyard is in the heart of Roussillon, south of France, close to the Spanish border. Halfway between the Pyrenees and the Mediterranean Sea, the Queribus Cathar castle, set on a steep cliff, overlooks the valley and the mosaic of our vineyard. High Environmental Value Level 3 vineyard. Sustainable, low-impact farming. Bush vines, dry grown. Yield: 40 hl/ha. Stony, black schist soil, with loam, in the Agly Valley. Vine age: 30-70 years.
Tasting Note
Flaxen color tinged with green highlights. Aromas of lime zest and flavors of ripe pear. A medium-bodied white made with great precision. Rich, fresh mouthfeel, long finish.
