Wine Details
The grapes used in Herencia were handpicked and fermented in small stainless
tanks. A portion of the grapes was left intact in full bunches and underwent cold
maceration at 10º C for a week. Fermentation was performed with native yeasts
under controlled temperature conditions, with the exception of a few batches with
higher sugar content, which were inoculated with selected yeasts. After
fermentation, the wine was gently pressed and transferred to first fill, medium
toast French oak barrels. After 14 months, the wine was transferred to 5000 liter
foudres where it was aged for a further year before bottling.

Tasting Note
Aromas of red fruit, floral, and herbs intermingle with sweet spices, oak and
underbrush. Elegant, rich, the fresh palate has notes of cherries and raspberries,
layered with plums and blackberries. Spice and herbal notes enhanced by touches
of dark chocolate and moist earth. Broad shouldered tannins and a slightly mineral
character on the finish. This wine will gain in depth and complexity with longer
bottle aging. Decant before serving.

Herb roasted leg of lamb, chicken seasoned with Indian spices, raspberry tart.
